Ume Su is a natural vinegar made from the juice of the Umeboshi plum. When the 'Ume' is pickled in sea salt, water and Shiso leaves, the fluids that are expelled become our Plum Vinegar. Ume Su has a unique flavoured is used as any vinegar in all styles of cooking, dressings or dips.
